Even if some people claim that red cabbage is a winter vegetable... if you love it like we do, it can easily be turned into a delicious alkaline lunch as part of alkaline fasting....
... and this is how we prepare it at the Zollhaus...
Alkaline red cabbage with sweet potato puree and glazed pear... soooo delicious.
½ head of red cabbage - cut into strips1 large apple - cut into cubes
1 large onion - cut into strips
½ red chilli - cut into fine strips
4 large sweet potatoes
4 pears - quartered
black pepper, salt, curry powder, lemon juice, agave syrup, vegetable stock, olive oil, sunflower oil
Radish sprouts, tomato, mint, leaf parsley, basil, sage

Alkaline red cabbage with apple and red chilli
Sauté the red cabbage and onion in a little olive oil, season with salt, lemon juice, black pepper and agave syrup, pour in the vegetable stock and simmer for approx. 30 minutes.
Shortly before the end of the cooking time, add the apple and half the red chilli and cook for a further 10 minutes until soft.
Sweet potato puree
Peel the sweet potatoes and cook until soft, then mash with a fork or use a potato masher to make a homogeneous mass and season with a little vegetable stock, salt, pepper and curry powder.
Glazed pears
Wash, quarter and core the pears.
Heat 2 tablespoons of sunflower oil in a pan, stir in the agave syrup and brown briefly. Add the sliced pears and glaze.
Serve the red cabbage and sweet potato puree as shown and garnish with radish sprouts, tomatoes, herbs and glazed pear. Enjoy your meal!
